Pasta with Pea Puree

We swap traditional red sauce for this light spring-like pasta, which delivers fresh flavour thanks to green peas, Parmesan, and fresh mint. Use frozen peas to add a pop of fresh flavour and colour to your meal.

This recipe yields 4 servings (serving; about 1 cup)

Ingredients

  • 8 ounces whole-grain linguine
  • 2.5 tbsp butter
  • 1 cup thawed frozen green peas
  • 1/5 cup fresh mint
  • 1 tsp lemon rind
  • 3/4 tsp kosher salt
  • 1 garlic clove
  • 1/4 cup shaved Parmesan cheese

How to Make It

Cook linguine per directions. Drain, reserving 1/2 cup of the pasta water. Cook butter in a skillet over medium until browned. Process browned butter, peas, 1/2 cup pasta water, mint, lemon rind, salt and garlic clove in a food processor until smooth; toss with pasta. Top with shaved. Parmesan.

Serve immediately.
